Are there any factors to consider between going with 1 oz or 1-1/8? I'd be using these mainly with a KSG.

It's partly a matter of what you're shooting - a bigger slug will do a little more damage. Also, they're both 1560 FPS, so the bigger slug has a little more powder in, and you can expect it to have a little more recoil. You may want to choose 1oz if you're just plinking. But, with a KSG, you might want to try one case of each or a split case, so that you can swap between them and decide for yourself
