While the 270 will do most anything the 7's will do, the one thing it can't do is; be a seven. I also am torn between the 7x57 and the 280. I have a 7x57 but often look at it while holding the 280 reamer. So far, it's still a 7x57. In truth, there are few circumstances where the difference would be all that apparent.
If you want to be REALLY cool... I have the reamer and dies for 7.62X57 Medium Mauser... necking down 8X57 with no other changes... will be one of two rifles.

A friend of mine up here has a reamer for the 8X57 necked to 6.5 cal. He uses it in silhouette competition. This is not the more common 6.5X57 which is the 7X57 necked down, but the 8X57, same as yours. The case hold 8-10 gr more powder, depending on density, that the 7X57 case.
Yours will perform somewhere between the 308 and 30-06 when loaded properly.

I think you get higher sectional density with the smaller diameter bullet (.277 in this case vs .284) when comparing same bullet weights.
So ted, would an 8x57 necked down to 7mm have a similar increases in capacity over the 7x57?
You do. The only downside to the 270 is the twist rate on most rifles won't stabilize pills over 150gr (except maybe shorter round nose 160s, but I see no point in shooting round nose bullets in higher velocity cartridges)

The standard 10" twist stabilizes the 160 gr Nosler partition, and it is far from a round nose bullet. It is also a very accurate hunting bullet to well past 400 yards, the distance to the turkey rail on our silhouette range.
Ted
I was commenting on your post that the twist was too slow to stabilize 160 gr bullets unless they were round nose.

Agree with all the above. I have 7 7x57's because they're classy. 7x64 for the extra range of which I have 3 (no Mr Hotycanon it ain't comin' back. I like it too much) LOL
Just snagged a ZG47 in mint condition in 7x57...oops sorry that's 8 now!
7x57 has go to be one of the most balanced calibres there is. Kilimanjaro Bell smoked over 1100 elephants the majority with the 7x57!
I have a 270 but prefer the 7x57. Better bullet sectional density.
A man with a 9.3x62 & 7x57 don't need anything else, but we're all Gunnutz so to each his own!
Got me an 8x68S too Markus!
7x57 is pure class, but the loads for factory are limited, and it pains me to say it seems to be getting very hard to find. That said everyone needs a 7x57.
