I'd say for "defence", a shotgun.
You can miss with a rifle if you're nervous or worked up quote easily, atleast with a shotgun using a heavy birdshot or lighter buckshot you have a bit of a spray pattern and the bead sight is quick to line in. Downfall, ammo is bulky so carrying much is heavy and cumbersome.

A handgun would be nice and compact to carry but we are in Canada, those evil handguns will bring down tanks, airplanes, and blow up buildings cause they are so powerful- *insert sarcasm.
 
None required. Coyote attacks on humans are so extremely rare that preparing for one is absurd. I have never personally heard a reliable story about a coyote attack on a human. I have read some accounts online, but again they're so rare it's silly to consider.

Probably more reasonable for you to focus on realistic threats such as being lost or injured while in a remote location. Therefore use the space to carry extra water, a compass and matches or other type items.

To the best of my knowledge that's the only confirmed case in Canadian history. Again, realistically riding your atv or walking rugged terrain is far more dangerous.

Rambo survivalist fantasies about fighting wild coyotes are immature and demonstrate a lack of understanding of the wilderness and wildlife.

There was a farmer down the road from where I grew up lost his ring finger to a coyote. He was out haying and got of the tractor to fix something and it came out of a fence line and attacked him. He managed to fight it off but not before getting a finger bit off.
When I use to hunt raccoons at night I've caught them trying to sneak up on young dogs in training even though they know I'm there...30yds from the dog. Never worked out well for the coyote though.

as for the actual defence from coyotes, whatever you are carrying should work...but to carry in prepartion for an attack?
as others have mentioned there are many more reasons to be worried about than coyotes...

I live in New Brunswick and while I will agree that it is rare but I can tell you that I have had to defend against a small group of coyotes and I was not so fortunate as to have a gun. Fortunately I did have a bolo knife and nice thick pants and only had semi minor bites on the calf of my leg. I would call coyote defence practical.

Carry pepper spray made for dogs. If you are in areas where bears are as well, carry bear spray. If the gun is ONLY for a coyote, its a waste.

Double barrelled 4 ga loaded with #12 shot soaked in Raid. Gets em everytime.

As for coyote defense, if the OP is serious (doubtful ;)), try a big stick. Or go the Liam Neeson wolf defense route and tape broken airplane bottles of scotch to your fists.
