I know older m31s had an issue with barrels and shrouds falling off. Has this problem been rectified? Really its the only thing stopping me from getting one is that issue..

Personally, I have not had the problem, and fairly sure I have one of the older models.
If you understand the barrel removes, that would be my suspicion as to the nature of said problem. I think it is a very generous assessment to say a barrel change takes 30 seconds. Probably 15, unhurried.
The way the shroud locks the barrel in place, and the shroud latch, I would think could be a weak point, if not inspected. If the shroud is securely latched, it would need to be catastrophic failure, for the barrel to "fall off".

If surplus, what is the condition of the bores?

Sunchild has the right of it here, you should not experience this issue unless the locking mechanism of the shroud latch were somehow compromised or not properly locked, these ones are just great
