Only my opinion: depends if the plates are cold liquid abrasion cut or hot plasma or torch cut. I have put .308 S&B lead core FMJ through the edges of 3/8 AR500 because it was hot plasma cut. NOTE: this was NOT Range Rabbit products. I wanted to state what has happened to me in the past with another product because of the way it was cut.

Yes, 3/8 AR500 steel is appropriate for 308.
I test with Norinco 308 at 40 meters (recommended that you be no closer than 100M from targets), and that ammo makes a tiny dimple in the plate, hardly more than a scuff on the paint. A gong, hung properly so that it swings with each hit, will endure thousands of hits before retirement.
