An update on inventory for the Sabertooth Mk II stocks: we have Woodland Digital camo available from stock right now and will have Black and FDE available from stock and available to ship as of next Thursday (22 June) - but they can be pre-ordered now.

What would be a good optic to use because I cant use my iron sight?
It really comes down to personal preference. You can fit a dot sight directly to the the top rail on the Sabertooth as eye relief isn't an issue on those sights or you can add a Razor scout rail in place of your rear sight leaf to add a micro-dot (which will also work in the original stock) or you can add an Optics Rail to fit a scope. The first post on this thread shows a couple of examples.
