Why is there even a shelf life for freeze dried food let alone 3 years...?

I think these are awesome, i like them for camping. but totally not prepper freeze dried food... It has a best before date of less the 3 years on everything i bought. There is no anti oxidizer in the pouches, no retort grade foil packing (another reason i like them camping, the packages burn away in a modest fire)

I think the freeze dried chicken and beef are quite the novelty and I would be in the market for bulk cans of it for long term storage. Just saying in case you ever have a conversation with Happy Yak.
