friend has big hands and says the 1911 is too 'small'.

just wondering if there are 1911's with larger frames, like the Browning 80% idea, only reverse...120%?

or, are there hand grips you would install that would fix this sizing issue?

Does he like a big recoil and rings of fire? Then Coonan is the perfect idea. It will fill his mitt.

Sti double stack will be thicker so that might work better, however, the overall circumference is not much more than a regular 1911.

Coonan is definitely a deeper grip so that should help. (To those with smaller average sized hands, don't let that scare you off. It is still a very comfortable and manageable size). The thing he might also appreciate about the Coonan is the length. I have average sized hands and with a regular 1911, my palm extends a little past the bottom of the grip. No big deal and doesn't affect shooting, but it is noticeable and not quite as comfortable to me as the longer grip on the Coonan. This is the main reason I like magwells, particularly S&As, on my 1911s.
