1911 parts advice

When selecting parts for a stainless 1911 do I have to go with stainless parts or are regular blued carbon steel parts fine to use in a stainless frame and slide?

I think what he meant, there is no difference.
But you can choose colour arrangements of your choice to make the gun look like you want.
If I had a matte or bright stainless gun, i'd probably go with black parts to create an accent, but this is just an opinion on what's pretty

That's good, thanks, my main concern was causing any unnecessary wear between the different steels. I didn't think it would be an issue but just to wanted to get some confirmation before I dropped the money on parts.

Probably.from a wear point of view, you would be better off with blue bits on a stainless gun. Less risk of galling.
