In 12ga I just use 2 3/4 field loads with 4’s or 6’s. as long as they pattern well in your gun at a given distance shouldn’t be an issue.
You only need about 4 pellets in the head or neck that retain 4 ftlbs of energy the load I use puts more then 50% of the pattern in the head/neck at 25 yards.

I used to pound ducks and geese with blue Imperial 2 3/4" 4s and 6s easily at 40 yards. Best waterfowl ammo ever made.
They will easily kill a turkey. Expensive chokes and shells are such a waste of money unless you actually spend the money and time at the patterning board to truly learn what your gun can do.

My shotgun is an old stevens 58 12ga 2 3/4 only with an adjustable choke. The patterns it throws with the new “imperial” from crappy tire are pretty good most of it is in a dinner plate sized pattern at 25 yards with the choke set to full. I have a full box of 2 3/4” imperial special long range #6’s sitting here haven’t decided if I want to shoot them or not yet but I bet they would make excellent patterns.
Not that I have hunted turkey. But I would think any that will take a duck at 40yrds is going to definitely have enough to wack the heck out of the head of a turkey at the same distance.
Especially because you can use lead. It hits harder than steel.
