I thinking of a custom barrel for my encore for deer and varmints which would you pick, I already have a custom 7mm-08.

If you do not need the extra velocity, the 260 Rem is fine; the 6.5-284 will give roughly 200 fps IIRC. I have a 260 Rem and I love the cartridge, but I would probably gone with the 6.5-284 if I was planning on shooting 100 yards on a regular basis.

I'm with Tod ,.260 for sure, if you want to go after varmints also.
The reason being, is that whhen you go down in bullet weight, the powder needed to get the 6.5/2884 moving any faster to make the difference is going to give you more throat erosion faster thhan the .260.
I would try to get a shorter throat for the lighter bullets, however.

How about a fast twist 22?

Now you can use a 22/250 to push 50ish gr bullets for varmints and 75/80gr bullets for deer (with controlled expansion bullets, deer are no problem at reasonable ranges). If you need more gun or range for big game, you already have the 7-08.

A 22/250 with a 75gr Amax would certainly have the muscle to take any varmint to 600yds (deer at 200yds and in) and paper punching/plinking to 1000yds is no problem. This assumes the rifle is accurate enough.

If you don't like the 22cal, then I would go 243. I love the 6.5 cals but you are so close to the 7-08 that is more of the same thing. Plus varminting tends to eat up lots of ammo, the 22 and 6mm offer the least expensive accurate bullets on the market.

+1 on the fast twist 22-250. It's tough to beat a .435 BC A-MAX at 3300fps. Better still, go fast-twist 22-250 AI. Even the thousand-yard 6mm's and 6.5's have a hard time bettering that for drift out to 1k.

There's a fast-twist .224 barrel in the EE right now.

Might be on the light side for deer, but if you already have a 7-08 barrel, you can't really get a better deer caliber than that.

REM 700 V -7mm08 - 24" barrel - trigger tuned
SPEER 110 TNT, COL 2.8", REM New or FL Brass, Varget 48.2 grains, Fed 210, 3250 -3300 ft/sec, 0.25" groups.

Try this load in your custom 7mm08. Don't think you would find a better varmint load in 260 Rem or 6.5-284. All it will cost you is a can of Varget, and box of TNT bullets that are quite reasonably priced.

Nosler 120 BT, COL 2.8",NEW REM BRASS, Varget 46.3, 3100 ft/sec.@ 10 Celcius.
Nosler 140 AccuBond, COL 2.806", NECK SIZED REM BRASS, Varget 44.5 2900 ft/sec @ 10 Celcius.

These two loads made a true dual purpose rifle out of Remingtons 700 SPS. With the 140 AccuBond sighted 3.0" @100 yds the 120 BT shoots 0.5" lower and about 3/8" left. At this sighting they both shoot the same trajectory to 400 yds (-15.0") and are about 3.5" low at 300 yds. My records show same hole groups for both loads as I didn't bother measuring them. I think you will find that your 7mm08 will preform equally or better than the other two cartridges.

If you want to shoot gophers go to a 223 REM 24" barrel. My REM SPS does great with Speer 33 TNT at 3244 ft/sec with 13.5 gr BLUE DOT in NS brass, COL 2.04", and CCI 450 primers. Last trip to the range I put 4 shots into 0.255", @ 100 m, with this load. I load the 50 gr Speer TNT to 3200 ft/sec with 25.5 gr Benchmark, NS brass,COL 2.235" and CCI 450 primers. Last time out I knocked over 5 gopher silouetts with 8 shots at 400 m in a slight cross wind.

I wanted one "all round" centrefire barrel to compliment a BP tube and I bought a 270W factory, blued barrel for my Encore.

I am pretty happy with it. Seems plenty accurate for me and depending how big/small your varmints are ... it would work ok.

No issues on deer...and qualifies in those parts of Ontario where 27 calibre is the max. Looking for a short 12guage barrel next and I will have an "cross the course" hunting gun ... at least "adequate" (if not stellar) for most seasons and game...
 
I have had a 6mm-284 for years now and it is one of the more accurate cartridges I have ever loaded for.

So I suggest neither and go with a 6mm-284...
