I like 120gr-140gr in the 7mm monolithic category.
Copper has lower density than lead, so dimensionally a 130gr mono works out similar to a 160gr conventional 'cup and core' bullet.
Anything heavier may need a fast twist to gyroscopically stabilize - this is related to the LENGTH of the bullet. If building from the ground up, there is no reason NOT to go with a 1:8 twist barrel - a typical 1:9 may limit you some.
Copper resists deformation better than lead, so a little extra velocity helps with expansion in a hunting context.
