I'm going to try 20 grains of sr-4759 240grn jacketed bullet in my 1894 .44mag. 21 grains is compressed, how low a charge can I go with this powder and still maintain safe pressure? I have gone as low as 25 grains in my .30-06 with no issues and that didn't even come close to full case capacity.

The best pistol book I have is The Lyman Pistol & Revolver Handbook.
They don't show 4759 in the 44 magnum, for any weight bullet.
be careful with what you are doing.
 
Are you sure your powder is not 4756?
Because if it is, you have an EXTREMELY DANGEROUS LOAD.
Lyman lists a max load of only 12.3 grains of this powder for that bullet in the 44 mag.
 
I got the data from the Hodgdon web site. 21 grains compressed for a 240 grain jacketed bullet. Can I just use .44 special loads?
