I am planning on loading up some varmint laods for my 260 Remington, but I have only loaded rounds with match bullets so far for it. Would any of you have any recommendations on varmint bullets that have worked well for you in both accuracy and terminal performance?

I had great luck with the 85 grain Sierra HP. Don't have my loading notes here at the computer but I think I was getting about 3300fps out of my 6.5X55 with 20" barrel.

95 grain Vmax...for longer range due to its superior BC

for moderate range inside 250 yard, a Sierra 85 gr HP or a Speer 90 gr TnT would be good

In the 6.5 bullet test I did, the 95gr V-Max expanded faster than the 90gr TNT. I'd go with the V-Max if you're looking for the splatter factor.
