Last Friday I put the first rounds through my Stag 10. The rifle was amazing but the weather was blowing sideways ice at me so I only shot one 20 rnd box of federal 150g, and 20 rounds of surplus.

I have the pmag that came with the Stag, and a 5/25 round gen3 pmag. The 5/25 worked perfectly. The 5/10 mag that came with it worked fine the first two times I loaded it, but after that it wouldn’t seat with five rounds in it, but it does with four.

I’ve opened it to look for obstruction, but it was clean inside.

As this is my first black rifle, i have no experience with these mags and could use the wisdom that is CGN.

Your only issue here is the mag is pinned to a tight 5 rounds. Unless your bolt carrier is locked back you won't be getting the mag to seat. Lock your bolt to the rear, insert the mag, chamber a round and buy me a beer later.
 
^^^this. I have a feeling you seated the first two mag loads on an open bolt. Even unpinned mags that are fully topped will give you difficulty seating on a closed bolt, and you usually have to give a firm push. The pinned mags are notorious for this if they are pinned tight.
 
When you break down the mag to clean it, trim a little bit (a little goes a long way) off the follower's leg on the rivet side, test fit, repeat if necessary until it fits 5.5rnds. Reassemble and repin.
