What is the difference between a 870 Express and a 870 Magnum?
Is it just that the Magnum will accept 3.5 inch shells?
Will all the barrells interchange?

You're a little confused in your terminology.

Their are two finish levels of Remington 870 - Express and Wingmaster

Within these finish levels are 3 variations in chamber size - 2 3/4" (Remington 870 Express/Wingmaster), 3" (Rem 870 Express Magnum/Wingmaster Magnum) or the Remington 870 Express Super Magnum, which is a 3 1/2" chamber with the Express finish.

Acceptable shell sizes are printed on all 870 barrels. The receiver will be labaled with the version (Nothing = 2 3/4, Express, or Super Magnum). DO NOT exceed the size printed on the barrel irregardless of the receiver size. The chamber is located in the barrel. It will get damage (and possibly you) if you exceed it.
 
Revival. I have synthetic express super mag and want to put on new stock and action a la magpul more tacticool and adjustable with pistol grip. Does anyone know if any old for express will fit? Or super magnum is different (or unavailable)? The manual leads me to believe that super mag has different sized stuff.

I have a Magpul Stock and forend on my 870 Express Super Mag. Fit no problem.

Don't forget they also made the rare 3 1/2 wingmaster in a super mag. I have one bought around 2002

Magpul actually says that the MOE Forend will not fit the Super Magnum receiver, but it fit on mine. I even emailed them out of curiosity and they confirmed it doesn't fit. I said well it does on mine and they told me no it doesn't. Go figure.
