So I have a case of 7.62 x 39 in cans and I have it in my shed (unheated) We get cold here here. Will it affect the ammo long term?

Typically the advice on storing ammo is use a cool, dry space. Humidity is much worse for ammo and guns than cold.

If for some reason you have to store it outside, see if you can find a few old ammo can's with the rubber seals still intact. Put the ammo in with a silica bad and you should be good for short to medium term.
 
If the can(s) are unopened you can probably store them safely at the bottom of the lake. If not, I vote for the already mentioned good ammo can + dessicate.
 
I don't see a problem. We used to store all of the CF small arms ammo in unheated bunkers.

Yes but those unheated bunkers had an earthen covering over them that kept them from going below freezing. Storing Ammo in sub zero temperatures is fine so long as it doesn't get cold, then hot, then cold, then hot. It is the temp fluctuations that causes the problems. With extreme changes in temp the powder performance could be affected quite a bit.
