Mickey, I don't think Remington's lawyers would allow the company to expose itself to the liability risks and sell the stock if it had a propensity to break. It is not likely to snap and cut you.
The stock does have design problems, though. The center line of the stock is offset to the left of the barrel (called cast - on) which prevents easy alignment of the eye over the barrel. Cast - on would be a good thing for a left handed shooter, but the design of this stock is such that a leftie would probably break his nose on the "knuckle" of the pivot point. The stock is far from rigid, you can flex it just by shouldering the gun and pulling it in tight. At the pivot point, the forces generated by recoil have to make two 90 degree turns, which is not a very good engineering solution. I think this point is where people believe the stock will break. I don't think it will, but the design will certainly not optimize recovery times for a second shot.
Two other side folding stocks (maybe more?) are available for the 870, one from Advanced Technology, Inc. (Marstar) and one from Choate (where in Canada?). I would like to see them in person and see if they are any better.
