I made some nice slow cooked shredded pork today. Pork, ginger-ale, 1/4 cup of cinnamon, 1/4 cup of powdered chipotle, 1/2 cup of applesauce and a little garlic, slow cooked overnight. For the sauce I got lazy and dumped a bottle of store-bought sauce in, but it can't be that hard to make a really good sauce yourself. I'm thinking maybe something with brown sugar, molasses, vinegar, tomato paste, and liquid smoke with some pureed onion, jalapeno & garlic - or something.

Anyone have any favourites you mind sharing?

2 cups ketchup
1/2 cup firmly packed brown sugar
6 to 8 tbls fresh lemon juice
1 teaspoon grated lemon zest
2 tbls molasses
1 tbls Worcestershire sauce
1 1/2 tsp liquid smoke
2 teaspoons dry mustard
1 teaspoon onion powder
1/2 teaspoon freshly gound black pepper

Combine all ingredients in a saucepan and whisk to mix. Let it come to a simmer over medium heat until thinck (8 to 10 minutes.) Yields about 3 cups.

I have come to prefer rubs over sauces though. I'd also recommend that you get a copy of the BBQ Bible by Steve Raichlen.
