Are some bullets louder?

Do the pellets make a sound? Yes.
"Big bore" air-rifles, eg. 9mm and larger are all sub-sonic (anything 'factory' AFAIK).
"Crazy movie sound effects" needs to be defined.
 
90% of the sound you hear is a normal air gun shot is the gun, not the pellet. The clang of the spring, or the slide of a CO2 pistol, etc. PCP rifles are near silent, and gas ram guns are fair quiet as well. Dieseling can make noise, but its an anomaly, and one that needs to be corrected - not a standard happening.
 
Projectiles will make a sound when they go through the sound barrier.
Good question though. I have heard over the years the sound made by a ricochet. It lasts a while.
It may be just the impact of the bullet but it does make a distinct sound.
 
You know, I have never sat down range and had someone shoot projectiles past my ear to find out what they sound like or even to differentiate sounds, it may be this summers project. Interesting question. will get back to you with the results if I survive.
 
Many years ago,a bunch of us army guys in CFB Lahr Germany hunted the Brown Channel Rats at night with our High Power Air rifles. I ran an HW77 while the others had Diana 48's and 54's. All of us were in the 1000 to 1100 fps range. We had small maglights mounted on top of the scope's to find the little critter's. As we were haveing dificulty getting hits at longer ranges, we figured they could hear the pellet's comeing and were able to get out of the way in time. So our Quest was on to find the most Accurate pellet with the lowest inflight noise.Our solution was to "hear" the pellets from the "rats" end. On a windless day at the Gun Club we had a 4X8 sheet of 3/4" plywood set at a 45 degree angle(set away from the shooters) on a simple frame under which we placed a small chair. This was placed at the 50 meter point( where most of our long hunting shots were). A set of targets was set up at 75 meter's. Each of us in turn sat in the chair and rated the sound of each shot as it passed approx 2 meter's to our right. As I recall the results were:

Wadcutter's were the loudest and were the least accurate. we figured they were becomeing unstable at that distance.

Pointed were the quietest but did not shoot the best groups. these we concluded the point's were not perfectly centered

Hollow points were slightly quieter than the Wadcutter's but gave better group consistancy

Round Nose (RWS SuperDomes) were just below the Pointed in sound and shot the best groups.
These became our main hunting ammo. It was not uncommen to buy 10 tins of 500 each week.

So to answer the original question, Ya some "bullet's" are louder than other's
