Bad smell when cooking mooseburger - what to do?

I second the salt water just make sure you dont use table salt use sea salt
its a trick used in commercial kitchens helps alot had to tell my dad this trick as he got an older bull moose and it smelled but after soaking the meat in salt water there was no smell :)
 
I think Bringing it is the way to go. Here is a basic brine recipe.
1 gallon water
1 cup kosher salt
1/2 cup brown sugar
Optional pepper, garlic, herbs etc. as desired

Simmer to dissolve salt and sugar completely, then chill brine.
Submerge meat and store in fridge for 5 days.
Rinse meat and cook in any preferred slow cooking method
 
The smell is the result of poor field handling and poor butchering. The animal needs to be skinned ,and placed in a cooler asap, not hung up for a week in the sun. When butchering remove all fat, silver skin and sinew and de-bone. Never use a band saw to cut meat, it drags bone dust into the meat. Butchers do this to save time and you get crap meat.
