Bear filets

just a simple recipe ...

you need:

  1. some bear loins ...
  2. a pan
  3. some oil or grease but very lightly flavored
  4. a dark half glass of beer
  5. a little shot of whisky
  6. a nice spoon of 35% cream




you cut the filet in very little part (remember trichonis is a russian roullette with bear) and cook it well in the pan that is medium heated with a little of your fat or oil ....

when you start to see the color of the meat changing (before burnt ...) you pour the dark beer in and let cook inside the meat.

again when it seems to be well cooked you add the whisky and pour the cream when the heat is back.

i can insure you nor the beer nor the whisky will change the taste of your bear meat ...

those filet didnt last very long this saturday.

i will come later with the ribs recipe that my wife did on Sunday but again the meat vanished so fast ...
 
Sounds fantastic Phil...... one of the favourite things the guys at camp like when one of us gets a bear is the loins sliced thin and slowly cooked to well done after marinating in wine and having Montreal steak sauce applied...

It's almost like cooking bacon, they just swing by the BBQ and grab it off of the warming rack as it gets ready.... lol
