I'm just starting to build a handgun collection based on the most popular manufacturers and calibers. Here is what I have or looking for:

S&W Model 41 - 22 lr ( my starter gun to get used to range shooting)
Glock 17 - 9 mm
S&W 686 - 357 magnum
STI Executive - .40 S&W
Colt 70 series 1911 - .45
Beretta Stampede - .45 lc

Anyone recommend something else or any glaring omissions I should look at?

Inglis High Power. How much of your money do you want us to spend for you? snicker.
If you plan on shooting them much, look into reloading. Shooting factory ammo gets expensive fast.
You have the 41 now or looking? (Elwood Epp's, link is above, has one in 'good' condition for $549. Jump. It won't last long.) They're very particular about what ammo they'll both shoot well and cycle the action using. No two will shoot the same ammo well either. You'll have to try a box of as many brands as you can to find the ammo your 41 likes. The cost of said ammo means nothing either. Mine will work with Remington Target and IVI Standard Velocity. It won't cycle properly using high priced ammo like Eley.
Don't let anybody tell you shooting HV ammo will damage it either. Lots of U.S. squirrel hunters use 'em with no fuss. There are lots of aftermarket grips available for 'em too. Not as inexpensive as they were when I bought mine though.
