Just wondering if anyone can recommend a top quality bench rest that I can use for sighting in my rifle. I was looking at a couple on eBay, but I thought I would ask around here first. If you have any links to them please reply with same. Is there anything I should know before purchasing one...?

Check the equipment exchange might be some good ones. There is a post
on members who have made their own. Sandbags work for me (but I do not
have anything bigger than a 300WSM). Commercial ones are all pretty similar
a V up front and an anchor in the rear. Plastic or metal is up to you. I have seen both at the range and they all seem to work. Tightbeast out of Saskatoon looks pretty durable.

I bought the Caldwell Rock rest and a Shooters Ridge "Bunny Ear" or "Rabbit Ear" bag to begin with. I still have both and use the rest for playing around with my rifles that have no bipod attachment but I have gone to a Protektor rear bag.

Make your own....
Do a search, there are quite a few nice ones that the guys have made and shared on here. I have a couple hours invested in mine. Not too fancy but does the trick.
Sandbags work well too.

Rest

Get a Bald Eagle - the one with a bubble level and a dial that allows you to move the rifle side to side as well as up and down . Very nice. Expensive, but nice.

Caldwell makes a cheaper version of the Bald Eagle. Same basic adjustibility I believe just...cheaper. I got mine for under $200 compared to about $600 for the Bald Eagle

I think its called the Rock Bench Rest. I like it but have never compared it to a Bald Eagle directly. Way way way better that the Hoppe's one I had used for years.
