Here's the next Jerky question; what is the best way to store a large quantity of Venison Jerky? Refrigerate? Don't refrigerate? Air tight? Paper bags?

I made a test batch last week that came out great; so this weekend I plan to make a large batch but I'm not sure how to package it for semi-long term storage. Any suggestions are much appriciated.

as a dryed food it will last about 3 weeks out on the counter if you need longer than that put it in a plastic bag in the fridge. I find that mine never lasts long enough to worry about it.

I've had good results vacuum sealing and then freezing large batches of jerky. Depends on how fast it gets eaten at your house I guess!

Vaccumm pack and freeze. Never had enough to go bad. It gets licked up fast around here. my son comes home for a visit and heads right for the jerky.

personally, i like to wrap it up in paper towel (3-4 layers) and vacuum bag it in 'large handfulls', if i have left overs, that is. the paper towel tends to soak up any left over 'grease', and the vacuum seal protects the meat for a long time. found a bag a few months ago in the corner of the freezer from 2006, (about 14 months old) and none of the guys at work got sick, so i'm guessing it was still ok!!!
