Best way to strip factory Remington finish from 1100 stock?

That Circa stuff is what I use.
And add an assortmint of brushes to yer kit.
Tooth, potato, pawt scrubber type with plastic fingers that aren't
oarribly stiff to werk the crevassis.
Try and awbstain yewsin sand paper.

And don't round out the corners.

Those aren't hard to strip, browning are a pita. I use Circa 1850 as Kamlooky said, A small can goes a long way; use a plastic putty knife to lift the slop off, get some 0000 steel wool, for final wipe down, burlap will work also, get some blue nitrite? gloves and stiff tooth brushes for the checkering. don't rush it, varnish comes off fast, some of the modern stuff takes a while and few coats.
And as you say, don't sand, or you will have to do the whole thing, and any little marks will show up, and show in your finish

Remington used a Dupont manufactured epoxy finish. It was wonderful at covering up blems in the wood. I have stripped a couple of BDL 700's and an old Wingmaster. The wood underneath rarely re- finishes as nice as you would think. You will need a lot of stock pore filler.
