biltong + pork ?

I know people make it, I've just never tried. I'm sure you could google a recipe. The Chinese make a sorta pork jerky from ground pork, it's really good, but I've never made it myself.
 
never made pork jerky. i would think it may be a bit tricky due to the high fat content.
there is also a concern of pork trichinosis in eating none fully cooked pork but if you had it frozen for a while it should take care of that.

post some pictures if you can, would be interested to find out how it turns out.
