Not sure I would eat that bear. In my experience, meat quality really goes downhill fast if they aren't gutted and skinned within minutes of being shot. I carry a gambrel and hoist with me and do it right then and there. Never had one that tasted strong or gamey. Even in the late fall, when it's cool out.
 
i ve gutted right now but left the skin on a few bears on average of 4 days ... im still alive and the meat is still very good even from the last one: most important is to lower the body temperature ...
 
From your list, I would choose the .30-06 as I have a rifle and suitable ammo, so I would not have to purchase anything.
If you have access to all those rifles, I would go either .45-70 for the lever for the heck of it or 8mm Mauser if you prefer a bolt(assuming it is chambering in a bolt rifle).
I have shot a few black bears, mostly with .260 and 7mm-08, none over bait. They are not hard to knock down, if you hit them right.
