1 mature rabbit cut into smaller servings
3 carrots, cut very thin
3 celery sticks, cut not as thin as the carrots
2 garlic cloves
kosher salt or table salt, whatever you yourself prefer
peppercorns
garlic salt
3 russet potatoes cut as you desired
4 tomatoes cut up and/or diced
2 sweet peppers
1/4 cup olive oil
1/2 cup red wine
2 cups chicken stock
4-5 cups cold water
heat up the olive oil and put rabbit in to brown in a frying pan, add your dry spices now and put the red wine in very last
take hare off the heat when browned
Put everything else in a bigger cooking pot and bring to a boil in the chicken stock and water, add you rabbit now and let it simmer at a lower heat setting for two hours minimum. If you find the liquid evaporating too quick, just add a bit more cold water as required.
Three hours is even better with occasional stirring, just make sure nothing burns on the bottom of the pot.
This tomato based recipe makes for very tasty stock BTW!
