I took the data from a ballistic calculator and put it on a chart.
My question is : why it isn't a nice regular curve ?

Your chart is in error. From 500 to 1000yds you have it in 25yd increments but from O to 500 you don't. Rework your chart.
 
Here's what it should look like, as mentioned, your range values are non-linear and from a practical standpoint the MOA values should be reversed to give a ballistic profile. If your chart was organized correctly, it would still work but it just makes more sense to plot it conventionally as you end up looking at your bullet's trajectory that way.

:redface: you're right : non linear distance makes it look funny.I'll re-do it.
I just use this chart to plot my finding and just to make sure they follow the theoretical line.
