So is there any difference in having adjustable objective on a scope, or the fast focus on the other end of the scope. The reason I'm asking is could you use a centre fire scope on a rimfire that has the fast focus?

The fast focus is for the reticle, not the target and parallax adjustment. If you use a centrefire scope on a rimfire, you may find that it is blurry at close distances and has more parallax error than a rimfire scope would. For general plinking, it may be just fine and the parallax error may not bother you at all.
