In any case, once we got it back home and into the garage, it took us 5 hours to butcher and wrap all the cuts. We wanted to know, at least once, how hard and how much work it would be... turns out, it's A LOT! We actually did quite well, but damn man, I'm sore and tired. Next time it's going to be a butcher. I just don't know where I can find one, much less one that deals with wild game.
I have a whole new appreciation for folks who can cut meat well. It's important to me that it's done well and as little as possible is wasted, especially out of respect for the life of the animal that was taken.
