Camp experiment ( grouse soup )

Guys, on our moose hunt, my son took several spruce hens and we decided to see what we could make up with it one afternoon as we were drying out from morning hunt. So I took 3 of the hens and deboned and cube the meat, basically to stewing size, and threw it into a frying pan with butter, some garlic and onion powder and browned the meat.
Next I added 2 stalks of celery cut up and about half a large onion. continued frying it until onions caramelized, and then I added about 250ml heavy cream. I allowed cream to start thickening, then added about 3 cups hot water. Brought it to a bit of a boil, added a package of lipton chicken noodle soup, reduced to a simmer and added 3 medium sized potatoes cut into cubes. simmered for about 1.5 hrs, added a bit of water, and we tried it. It was amazing! When the rest of our group got back they cleaned it up in short order.
I didn't really measure the fluids so you can play with amounts, I used a large frying pan on propane stove, by time the guys came back it was more like a stew vs a soup, but you get the idea. We will definitely be making it an actual meal at net years camp. ( 5 guys had about 1 cup each with quantities stated ) If you try it, let me know how it turns out
 
Another way to make grouse soup is to put them in the pot whole.(plucked if you're ambitious, skinned otherwise) Salt, pepper, water. Add other things to taste.
 
Mmm love sprucies. I also put the bird in water whole with a sliced onion potatos, salt, and pepper. I'm not the kind of guy who brings tarragon out hunting lol
 
I like spruce grouse and sharpies in the pan with butter and salt and pepper... Takes about five minutes... But, I have made soup out of just about every wild meat out there...
