canned deer meat receipt

I am getting ready to can some deer meat. In the past I have cold packed the meat in jars and added salt and beef fat, then put in pressure cooker.
Anyone else got any other suggestions?

All I have ever done is just added salt. I would like to hear of some recipes too.

I still have some jars from 2004. I wonder if they are still good? I think I will wait a few more years before I try them.

I did a search through the Game Receipt thread and one member uses salt and a clove of garlic.
