Anyone would have tips for canning fish c/w recipes? I have just the common type canner and not a pressure style one. I'm heading out tomorrow for dip netting for some suckers and heard that they can be canned to taste something like salmon. I appreciate any type of info... Thanks
 
you are able to can fish by the boiling water method if you don't mind waiting for 5 or 6 hours but for $150 you can get a pressure canner- faster and MUCH safer. Pressure cooking fish in jars is much safer for the final product and only takes 90 minutes. Suckers aren't bad smoked either but canning them makes the bones edible. I use a bit of beet juice from a jar of pickled beets to give the salmon a pink colour.
