My SKS bolt and bolt carrier were beautiful when I bough the gun. As time has gone on, both the bolt and carrier are getting carbon stained. I've cleaned the metal over and over but just can't seem to get it clean. Rags come away clean... but the metal seems to get progressively more stained the more I fire it.

Any carbon solvents anyone can suggest? Metal polish perhaps?

If your looking for a great metal polish try Autosol. I have polished up stainless steel handguns with this fine metal polish, worked out great. I polished some up until the parts were like chrome.

a finer scotchbrite pad works, when I have rough spot id like to even out, use oil and go real light so ur not abrading the part or finish.
