I've resized 50 270 win brass to 7x57 mauser.
The resized case has about 1/2 inch of extra neck.
what is the best way to trim the neck down to the right size.
Currently I'm using a lee case trimmer with the cutter mounted in a drill press but it takes about a minute a case and sometimes jams.
Is there a fast way to cut these off then trim?

One thing you will have to be careful of, is that no one looks at the headstamp and tries to chamber one in a 270.

RCBS make a case trim die in 7X57. One swipe with an extra fine hacksaw and you're ready to finish the trim.

Why Not makes a good point on your choice of case to convert. Better to size down a 30-06 case than a 270. If some one stuffs your 7mm conversion into a 30-06 chamber it probably won't headspsace on the bullet and allow firing. Even if it did fire nothing too frightening should happen. In a 270 chamber however there is a good chance some bullets will allow a close headspace match and allow firing. Case failure is very likely with subsequent damage to the rifle and possibly to the person.

Trying to trim 1/2" of case with a conventional case trimmer is counter productive and a bit hard on the cutter. Get a trim die and one of the 6" hacksaws with very fine teeth blades as suggested by the same gent. Follow that up with normal case trimming and chamfering.

+1 on that.

I have an excess number of 270 cartridges and very few 30/06.

That is an excellent caution on chambering a case reformed from 270 to 7x57 back into a 270. Luckily I don't have a 270 and it is unlikely I will loose a case when they eject from my 7x57 rolling block.

The case trim die from RCBS sounds great I think I will order one.

Thank you for all your help.
