Yes. The barrel is changed. Usually the magazine is altered so that the shorter .308 feeds properly.

why bother?- just look for an ISREALI mauser chambered in 308/7.62mm- they're GENERALLY very good shooters and sometimes show very little usage- as far as the process goes, basically, it's just off with 1 barrel and crank on the other, and check the headspacing- there may or may not be a block in the magazine well-
