Is there any way to vary the hight of these sorts of pads other than taking it to a seamstress to modify it? Yeah, I know I could probably do it myself, but I'm not great at sewing.

If you mean would they work with an adjustable stock, yes mine does. The velcro straps holding the pad in place are not sewn to the pad itself. You simply unhook the the straps and set them for the desired height.

No I'm going to be using the crappy stock that comes with the Stevens 200. It's not adjustable.

Build up the stock with duct tape then put the pad over-top might be tough to get the bolt out. I would say get the pad you like and you will figure away to make it work.

You bet you can raise them up! Just put a layer or two of closed cell foam underneath and torque down the straps to hold it in place. I bought a sponge from the dollar store and cut it to shape and put it underneath. It's a bit softer than the closed cell foam, and raised it up about 3/4".
