A few times heading back home after hunting I've passed pheasants and chukar in my area. Just today I passed 3 chukar that I probably could have caught by hand if I tried...

Can't say I've heard much about these delicious looking birds ... Are they good eating?
 
Very good eating, breast can get a little dry so just wrap them in bacon.

Can be made into nuggets as well.
 
These birds I saw this morning were so disinterested in escape that I had to be checking to make sure I didn't run over them... Is this typical?

Well, they are prolly setting on a nest.
The nest being nearby.
Had you made a move on them they likely would have ran a few feet away dragging a wing in appearance of it being broken.
Eventually dragging you further and further from the nest.
Used to chase Pheasants back in the day doing just that and Snipe too.
then again maybe they where just plain dumb taking a page form a fools hen.
