Does anyone know how difficult it would be and/or how to convert a P226 from Double/Single action to Double Action Only?

It is not too difficult if you are comfortable with taking the 226 down and putting it back together properly.

Although there are more parts to be changed for the DAK, I also agree that if you are converting your DA/SA, go to the DAK Trigger system. It is a much finer system.
 
It depends how comfortable you are with a complete disassebly of your pistol. I just converted my 229 to the DAK trigger system and it is pretty straight forward but it does involve completely stripping your pistol. The only part that you don't have to remove is the mag release assembly.
You will need : A DAK Hammer
A DAK Hammer Strut
A DAK Main Spring
A DAK Safety Lever
A DAK Sear
A DAK Sear Spring
A DAK Trigger Bar.
Don't forget to take the hammer reset spring out as it is not needed for the DAK Hammer.
If you just want a DA pistol you need only replace the hammer with a double action only hammer and remove the decocking lever. If you have tried the DAK system though it is far superior to DAO.
 
Why? Personally, I don't like DAK at all! SA/DA is a lot nicer. DAK trigger is not like Glock/M&P trigger it's way longer and feels heavier.
