Local fly-tyers would also be interested in tanned Coyote pelts. They don't need to be in premium condition either.

I understand your need to 'justify' the killing of animals to yourself. I too went thru the same debate. I found a guy that will spend the time to skin and stretch the hides as he's too old to hunt them anymore. So I give them to him for free. He collects anything he can from them at auction. It's a good relationship. I help the farmers by shooting some 'yotes, and I help the old guy by supplementing his pension....
