Thanks alot for the help guys. Luckily when I removed the grip there's about 3mm of screw sticking out, so I'll just grip it with vise grips, and back it out...what a relief.

I like the previous suggestion of taking it to a professional before you make it worse.
Easy-outs and drilling techniques need to be perfected on scrap metal, not pistol frames. And you could get them to install the grips for you too.
I'm pretty sure those only work on screws with a stripped head, not screws with no head.If it's not too late and if you have basic skills/tools here is what I think you could do:
Check the size of the broken screw (this set removes screw sizes #4 - #16) and if it fits buy one of these:
