Cuts of meat for sheep

Just wondering what you guys get done with a sheep.
Burger? Sausage? Roasts? Steaks? Stew meat?

Never butchered one. Going on a hunt in November
 
All of the above...just butcher them like a deer although any of the November sheep I've had have been pretty nasty....especially in the rut. Before that they are delicious!
 
merguez... Here's how to make a delicious and traditional lamb sausage. For this recipe, you will need: 1 1/2 boneless lamb legs, 1 1/4 ounces kosher salt, .13 ounces dextrose, 1/2 teaspoon pink salt, .007 ounce Four Spice Mix, 1.2 ounces harissa paste, 4 cloves crushed garlic, .06 ounces crushed red pepper flakes, 2 ounces red wine, pork casings ans 1 ounce ice water. To make the Four Spice mix, you need: 8 tablespoons black pepper, 2 tablespoons ground cinnamon, 2 tablespoons cloves and 3 tablespoons nutmeg.
 
Do you think a ewe or lamb would be pretty rank. ?

Never eaten one of those from November but I suspect they'd taste a whole lot better than a November ram....come to think of it, nearly anything would.
 
Not that I get it very often, but I've had some incredible loin chops (think little T-bones of Sheep) and a couple
of BBQ'd racks of ribs. Top drawer !

I know a buck in rut can be rank. But a doe In the same time is great.
Hope the same for sheep. Might take a lamb is its a good size and I see one
 
Mountain sheep is the finest eating of all NA game, bar none !!! However in deference to SH I'll have to say our seasons don't allow their hunting during the rut.
Regulate34...........you will be disappointed if you shoot a lamb, as they are pretty much tasteless and 2 grown men can sit down and eat the whole thing in one good sitting...........but remember my experience is limited to early season Dall and Stone sheep...........

I'd qualify that statement a bit Douglas. Thinhorn sheep are the finest eating of all NA game.....absolutely! Bighorns can be pretty good, especially ewes but bighorn meat is definitely not in the same class as Dall and Stone. Throw the rut into the equation and bighorn become the skankiest of all NA meat.....yes, even worse than rutted up caribou!
