Does anyone know how to remove the "wood" grip off the bayonet? I'm assuming that it's attached to the tang with some sort of rivet?

Has anyone been able to source out a M12 x 80 x 1.0 pitch hex headed bolt (or socket head) to replace the slotted rear stock bolt? I've called allover Calgary, and can't seem to come up with one.

Ya hunter you have to drill out the rivet. Just make sure to do it on high speed and use cutting oil. Or if you want one I can sell you mine that has it already removed.

you wont find one you would have to have a custom run done. the only application besides a cz stock, that I could find that uses a 12x1 thread is a honda flywheel bolt. 12x1 is very uncommon 12 x1.75 is sandard 12mm thread, 12x1.5 is considered a fine thread, 12x1.25 is less common but still used 12x1 is almost unheard of.
