I've been thinking of swapping the sights on my Shadow 2 to something with windage adjustment.

Every once in a while (like today) they seem to need tweaked a little and its much easier to do so with adjustable sights as opposed to drifting the stock sights.

Any suggestions for suitable replacements?

Does replacing the sights mean its still eligible for Production class in IPSC? I imagine so long as it still fits in the box it should be good to go.

You could go with a CZ adjustable rear or Dawson. As long as you don’t need to alter the original dovetail it would remain Production legal. Production guns don’t need to fit in the box.
 
why would they need to be tweaked? I can understand if the sight was off initially, but once drifted to the right spot, it will remain there forever. There really isn't anything to come out of adjustment.

Different loads make the POI vary.

I’ve experienced elevation changes with different loads, but never windage.

What bullet weights/brands are you seeing a windage shift? Is it consistent?

Maybe check your crimp too (if you reload).
