Almost 50 years of making deer-- game sausage -- first time :redface: :mad: still not sure what happened-- finger slipped on plastic cup I was pushing meat in with? Be careful ! It's not my trigger finger :rolleyes:

I expected very little sympathy, thank you for all replies they do help. I am just so pizzed off at how stupid it was, The sausage tastes great, we removed one short section, seems nobody wanted to try it, :eek: Truth is the finger is still there it kind of ripped off a slab down to nail from bottom and left it dangling, but a little reconstruction and it will buff out in time. You get so familiar with doing that kind of thing and just aren't being careful. Here is our time proven sausage recipe:
25 LB Batch
Half moose-Deer or other wild game- Half 50-50 pork trim
3 1/2 TBS pepper
1 1/2 TBS garlic powder
1 1/2 TBS sage
1/8 cup meat cure (I use a honey flavored kind lately)
1/2 cup salt
1 TSP ground cloves
2 TBS mustard seed
1 TBS onion powder
add liquid smoke 2-3 TBS or just smoke after stuffing
use at least four cups of water to mix and may need more to stuff
fingers and peckers optional

OUCH!!! That must have been painful. Hope you heal up real soon. Thanks for the sausage recipe, I will have to try that one without the secret ingredient, lol.

Well, at least it is still attached to the rest of your hand.
Thanks for posting the perils of not paying attention or one of the many reasons ones hand can end up in the wrong place at the wrong time.
Not saying you where not paying attention, just one of many reasons accidents happen.
And a speedy recover for you too.
