I remember seeing someone on here with a break open 12ga (single or double barrel I can't remember) that cut the butstock off and with some wood work all that was left was the pistol grip part of the original stock.

I'm curious about trying this as a bit of a project.
Did it actually work, or is it impossible to hold due to the grip being angled mainly horizontal (pistol grips for shotguns are usually more vertical)?

What's an old 12ga double barrel somewhat beat up worth? 150? 200?

you can go to almost any gun store and pick up an old used 2 3/4" double for ~$200. just make sure to check that the lockup is tight.

i suppose you could cut down the stock, however it would look silly with >20" barrels and a pistol grip. most people are drawn to the PG thing (i guess its the movies we all grew up with: Mad Max, Aliens, Terminator, etc - no '80s action flick was complete without one), but the novelty wears off quick. i dont have much use for a PGO stock myself, but would never discourage anyone from trying them.
the problem is that if you try it with something like a Remington 870 and then change your mind, youre only out $20 for the PG and 2 minutes with a screwdriver. if you bubba the stock of a double youre left with a boat anchor.

as manbearpig says a shotgun with a pistol grip only is a bit of a novelty . a easy way to try a gun with out cutting the stock is to grasp the grip and shoot with the stock away from the shoulder .do not try this with a gun with an exposed hammer as it leaves a nasty gash in your hand . do not ask how i know and yes i did not learn the first time and held on tight only to repeat the lesson .
