Ejector in bolt head.

Did John Garand invent the spring loaded ejector in the bolt head, I have never seen this in any older rifle than the M1- Garand.
All my other older rifles have a receiver mounted ejector.

True, but the plunger was not spring loaded but was operated instead by a fixed ejector mounted in the receiver.
Mister Garand must have been inspired by that design and took it one stop further.

Yep. The Remington Model 8 (aka Remington Autoloading Rifle) had a spring loaded plunger ejector in 1905. FWIW, Browning also created the double hook trigger set up used in the Garand (along with the RSC 1917 and probably others).
