I bought a 1942 91/30. the metal is in excellent shape, and the barrel looks like new. I've polished the bearing surfaces on the trigger, and I will be floating the barrel in the next few weeks. I will also be using handloads. What kind of accuracy can I expect out of her?
 
Depends on the rifle itself. Some of my Mosins will do MOA with dedicated reloads, others not so much :p Your only way to be sure is to shoot it! :D

I can shoot moa with my own loads at 50 yards, but not at 100 due to old eyes. At 100 yards with open sights, the front post takes up 5 inches of target, yet I can still shoot less than four inch groups with a dark bore.

Having that said, lots of Mosins need some work and special touches.

I personally like 150gr .311 or .312 bullets (Picked up off of Jerry at mysticprecision) behind 46gr of Reloader 15 powder with Prvi brass and Federal large rifle primers. Makes for a fairly accurate round I find. With the 1891s I usually up it to 48gr of powder with the same results.
 
I got this load from candyman at surplusrifleforum

123g fmj over 50g IMR4895. I know this man to be honest and knowledgable
he runs hornady 123gr bullets. I haven't run this load yet but the user claims "Hand loads.
In my home shop built, fake PU sniper I can put 5 rounds under a dime off a front rest." I guess the normal caveats apply reduce load by ten percent and watch for pressure signs. oh my lawyer says USE AT YOUR OWN RISK MG4201 TAKES NO RESPONSIBILITY IF YOUR GUN KABOOMS. edit got this load from burner* edit
